Serves 4
Ingredients
-
2 whole pompano fish, cleaned and scaled
-
2 tablespoons olive oil
-
2 lemons, thinly sliced
-
4 cloves garlic, minced
-
1 tablespoon fresh parsley, chopped
-
1 teaspoon dried oregano
-
Salt and black pepper to taste
Directions
-
Preheat your oven to 375°F (190°C).
-
Rinse the pompano fish under cold water and pat them dry with paper towels. Make three diagonal cuts on each side of the fish.
-
Drizzle olive oil over the pompano, ensuring they are well-coated. Rub minced garlic, dried oregano, salt, and black pepper all over the fish, including inside the cuts.
-
Stuff the cavity of each fish with lemon slices and sprinkle chopped parsley inside.
-
Place the seasoned pompano in a baking dish lined with parchment paper.
-
Bake in the preheated oven for approximately 20-25 minutes or until the fish is cooked through and easily flakes with a fork.
-
If you prefer a crispier skin, you can broil the fish for an additional 2-3 minutes until the skin is golden brown.
-
Carefully transfer the baked pompano to a serving platter.
-
Garnish with additional lemon slices and fresh parsley.
