Ingredients
-
4 Swordfish Steaks
-
⅓ cup extra virgin olive oil
-
2 tbsp fresh lemon juice, more for later
-
1 tsp coriander
-
¾ tsp cumin
-
½ to 1 teaspoon sweet Spanish paprika
-
¾ tsp salt
-
½ tsp freshly ground black pepper
-
Crushed red pepper, optional
Directions
-
Dab the swordfish steaks until they’re dry and position them in a pan (or any dish with raised edges). Generously slather the marinade on both sides and let it sit for roughly 15 minutes as you preheat the grill.
-
Crank up a gas grill to high heat and oil the grates beforehand.
-
Once it’s heated, sear the fish steaks on high heat for about 5 minutes on one side, flip them over once, and continue grilling on the other side for approximately 3 minutes. The fish should easily flake but still retain its firmness. You might notice a slight pink hue on the inside, but it should be fully cooked by the time it’s served.
-
Drizzle some fresh lemon juice and, if you prefer a bit of spice, sprinkle some crushed red pepper flakes.
