Serves 4
Ingredients
For the Sea Bass:
-
2 sea bass fillets
-
2 tablespoons olive oil
-
Salt and black pepper to taste
-
1 teaspoon dried oregano
-
1 teaspoon paprika
-
2 cloves garlic, minced
-
Juice of 1 lemon
For the Mediterranean Salsa:
-
1 cup cherry tomatoes, quartered
-
1/2 cucumber, diced
-
1/4 red onion, finely chopped
-
1/4 cup Kalamata olives, pitted and chopped
-
2 tablespoons fresh parsley, chopped
-
2 tablespoons extra-virgin olive oil
-
Juice of 1 lemon
-
Salt and black pepper to taste
Directions
-
Pat the sea bass fillets dry with paper towels. In a bowl, mix olive oil, salt, black pepper, dried oregano, paprika, minced garlic, and lemon juice. Coat the fillets with this mixture and let them marinate for about 15 minutes.
-
Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
-
Place the marinated sea bass fillets on the grill, skin-side down. Grill for about 4-5 minutes per side or until the fish is opaque and easily flakes with a fork. The skin should be crispy.
-
While the sea bass is grilling, prepare the Mediterranean salsa. In a bowl, combine cherry tomatoes, cucumber, red onion, Kalamata olives, fresh parsley, extra-virgin olive oil, lemon juice, salt, and black pepper. Mix well.
-
Once the sea bass is done, transfer it to serving plates, and top each fillet with the Mediterranean salsa.
-
Garnish with additional fresh parsley if desired. Serve your grilled sea bass fillet with a generous serving of the Mediterranean salsa. It’s a vibrant and flavorful dish that captures the essence of the Mediterranean.
